Appetizers:

Family style

A selection of the Tuscan Tradition

Pasta:

(pasta is all hand made)

• Ravioli filled with ricotta and spinach served with butter, sage, 36 months parmigiano  🌱

• Roasted squash and musheroom Cannelloni 🌱

• Gnudi “Naked Rvioli” with parmigiano cream and roasted chest-nuts 🌱

• Pinci, Cinta Senese “Black Feet Pork ragu’ or Aglione (giant garlic & tomato sauce) 🌱

• Spaghetti alla Chitarra with “6 hours” Veal ragu’

• Risotto with saffron and crispy prosciutto

• Tagliolini with White Truffle 🌱(supplemental cost)

Second course:

• Slow cooked Veal cheek (depends on availability)

• Rolled rabbit stuffed with pork sausage

• Braised Quail with pomegranate

• Tuscan Barbeque, a mix of pork, chicken and beef (for the entire table)

• T-Bone Fiorentina steak cooked rare to medium-rare (for the entire table)

  • T-Bone Fiorentina steak with White Truffle (supplemental cost)

  • Roasted whole Orata or Branzino al cartoccio (sea-bream or sea-bass)

• Dover-sole with White Truffle (supplemental cost)

Side dishes:

• Fresh or grilled vegetables from the garden 🌱

Appetizers:

Family style

• Classic Tuscan appetizer (bruschetta, selection of cured meats and cheeses)

• Zucchini and Tomato Caprese 🌱

• roasted beets with goat cheese and black truffle 🌱

Pasta:

(pasta is all hand made)

• Ravioli stuffed with ricotta and seasonal herbs with a choice of the following toppings: -

Veal Chianina sauce  or  Maremma tomato sauce 🌱

• Pinci with Veal Chianina sauce or Wild Boar Sauce

• Pinci all’Aglione (giant garlic & tomato sauce) 🌱

• Thin savoury crepes with mushroom 🌱

  • Lasagna with vegetables 🌱 or with Chianina veal sauce

Second course:

• Beef Spezzatino, a classic Tuscan Stew, cooked in white wine (no tomato)

• Turkey fillet Rossini Style, slow cooked with black truffle

• Slow cooked Veal cheek (depends on availability)

• Pollo alla Cacciatora (The Hunter’s Chicken stew), kale, tomato, black olives

  • Livorno Style Cod Fish (cod fish filet cooked in tomato sauce)

  • Rosticciana, slow cooked rack of pork ribs

Side dishes:

• Fresh or grilled vegetables from the garden (can be served as a second course) 🌱
